PAPA JAY'S SPAGHETTI SAUCE
1 quart whole tomatoes (or 1 28 oz can)

8 ounce cans tomato sauce
1 TBSP garlic powder (not garlic SALT)
2 TBSP Italian Seasoning
1 tsp Oregano
3 TBSP brown sugar
2 TBSP balsamic vinegar
1 medium onion chopped
1 red (or green) bell pepper chopped
1 pound ground mild Italian sausage
8 oz package mushrooms sliced
1/2 cup romano cheese
Brown sausage with onion & pepper until done. Drain off fat (or use lean meat) Add everything else in no particular order EXCEPT romano (or parmesan) cheese. Simmer about 45 minutes or until it appears that flavors are well-blended, adding romano/parmesan near the end. Stir often so romano doesn't stick to the bottom. Thicken as necessary with water/cornstarch.
I only know how to make lots of everything but this freezes well.
