FRESH SALSA


1 quart home canned tomatoes (or one 28 oz. can inferior commercially processed whole tomatoes) drain most of water/juice.
1 bunch green onions chopped
½ bunch FRESH cilantro leaves
1/4 to 1/2 fresh cucumber peeled (optional)
1 small can diced green chilies
1-2 jalepenos finely chopped (or commercially canned jalepenos – monitor “hotness” carefully)
1 lime squeezed
fresh ground pepper to taste

Blend tomatoes, cilantro leaves, and cucumber
in a food processor. Add the rest.
