SOUTHWEST POTATO SOUP


5-6 med potatoes diced and boiled
broccoli 1 ½ to 2 cups florettes/steamed
½ onion, chopped and sauted
2 T chopped green chilies (canned)
1 can cream of nonfat soup (I use chicken)
1 ½ tsp chicken boullion
1 cup chopped ham (or not)
½ tsp sage
1 ½ soup cans of milk
1 C cheese

You can put all this together in a dutch oven or soup pot and make a nice soup.  We have done this with just vegetables, without ham, but added a can of corn, or you could add any other veggies you have about.  You can also heat up the soup on the stove, (carefully so the milk doesn’t scorch), then bake in the oven with some Pillsbury canned buiscuits on the top.  Just bake until the rolls are done.
