MARINADES


GARLIC-BASIL (Italian)

2 parts extra virgin olive oil to 1 part vinegar (light balsamic or rice wine are best)
fresh garlic cloves crushed or garlic powder
fresh (if possible) basil chopped
lemon or lime pepper
Montreal Chicken Seasoning
red pepper

KOREAN PUL KOGI

Used with pork loin, beef flank steak, or chicken tenders
1 part extra virgin olive oil to 1 part rice wine vinegar to 1 part soy sauce
1 tsp + sesame oil
fresh garlic cloves crushed or garlic powder
ground ginger
red pepper
a little brown sugar

MEXICAN MARINADE

2 parts extra virgin olive oil to 1 part vinegar
lime juice
light garlic
onion powder
chili powder
cumin
lemon pepper or lime pepper

This one works well as a main dish:  pan fry at med-hi heat, add more of the marinade near the end so it is a little saucy.  Add freshly chopped jalapenos and black beans.
