We always seem to be feeding people at our house. Carri and I love to cook together. We frequently get requests for our recipes. Here are a few of the ones we've actually written down. Bon Appetit!
ALFREDO SAUCE
We had to eat at our favorite Italian restaurant several times before we finally got this one right.
FRESH SALSA
Our most requested recipe. The secret is in the tomatoes. Fresh from the garden or home canned...
CHILI VERDE
Ooh...I don't remember where we got this one but it's amazing.
MARINADES
Garlic-basil, soy-ginger, and Mexican...these are quick and terrific on the grill
PAPA JAY'S SPAGHETTI SAUCE
Twenty years of tweaking and I finally wrote it down. Wonderful bold flavor.
TORTILLA SOUP
Right at the top of my list! Carri uses spicy refried beans and I throw in some grilled chicken cut into chunks.

We perfected this one while we were poor grad students and had nothing but flour and salt in the house.
BEEF STEW
Another grad school creation. We couldn't afford to put gas in our '72 Gran Torino so we entertained ourselves in the kitchen.
HERBED CHEESE PIZZA
A lighter version of an Italian classic. Fresh ingredients and Carri's dough recipe MAKE it.
CHICKEN PARMESAN TORTELLI
Fresh basil is the key...don't get too fancy with the spices. Be sure to cook the tortellini in chicken broth.
STUFFED AVOCADOS
We had this amazing dish in a high-end restaurant and came right home to figure it out. We came VERY close.
MEXICAN BLACK BEANS
I was not much of a bean eater before this. I love to add freshly chopped jalepenos when serving.
SOUTHWEST POTATO SOUP
Corn, ham, and potatoes are the main event in this creamy soup. The green chilies give it a little kick.
JERI'S CRANBERRIES
Fresh apples and oranges give an old holiday tradition a new twist.
BLACK BOTTOM BANANA CREAM PIE
Very rich and very habiit-forming. This one never stays in the fridge for long.
CHOC-CHIP BROWNIES
We put both milk chocolate chips and butterscotch chips in...and lots of them. It is impossible to stop eating these.
WHITE BEAN SOUP
Roasted garlic cloves and rosemary give this tomato based vegetable soup it's unique and wonderful taste.
BAKED FRENCH FRIES
We're always looking to cut back on the fat. These are a family favorite.
OATMEAL ROLLS
Made with oatmeal instead of whole wheat. Very moist and delicious (especially right out of the oven).
CHICKEN SPIEDINI
Asiago cheese makes this easy dish unforgettable. So easy. Serve with fresh roma tomatoes and basil.
SLOW-ROASTED SIRLOIN
My grandfather was famous for his pit-barbecued beef. This is the oven version of an American classic.
